Green Mealie Bread – Zambia, Zuid-Afrika
2 cups ground green mealies (raw corn)
2 cups flour
2 tbs. sugar
1 tsp. salt
4 tsp. baking powder
Mix dry ingredients together. Add enough water to form a stiff dough. Put the mixture in a greased loaf pan and steam for about 1½ hours.
Makes a one-pound loaf.
